Cheesy Garlic Spread

Today morning I was assisting the main chef in making sandwiches. Sandwiches were being made with toasted wheat bread, cucumber, tomatoes, mashed potatoes, grated paneer, steamed finely sliced beans and butter saute lady's finger.

The entire making needed some spicy sauces. So we decided to whip up two spreads. A tangy spicy thick white sauce and green mint spread ( which i will share later ).  So we thought and created this sauce in the following way.

Ingredients:-
To Saute:-
1 medium sized onion
1 whole bunch of garlic
1 tsp sugar
1 tsp salt
1 tbsp butter

For Grinding:-
1/4 cup crisp cashews
1 red chilli
75 gm paneer ( roughly 1/3 rd of a 200gm paneer block )
1 tbsp butter
3 tbsp thick curds
1/2 lemon
3 sprigs of fresh rosemary / thyme ( one can used dried about a tbsp of it )
4 leaves of fresh chives ( optional )
salt to taste

First saute one finely chopped onion in butter added 1 tsp sugar and 1 tsp salt, added one whole bunch of finely chopped garlic, saute well and switch off and cool.

Grind the cashews and red chilli coarsely. Add the fried onions and garlic, paneer, butter, lemon, rosemary, chives, two tbsp of curd salt. Grind, check consistency add the curds as as required. Makes about 150 ml.

Enjoy with toasted bread or chappatis

Simple hair care

Aa.... A topic that is so touchy for many. I remember as a child my parents telling me the best way to take care of your hair is apply coconut oil and wash with Reetha / Shikkakai. I was like mom what do you understand the pains of combing the hair.. Hair is so frizzy and the struggles went on to breaking and hair thinning etc...  Went on to try the so called so many conditioners... I noticed it helped temporarily and definately did not feel good by the 2nd day ... 😏  Finally came to a point of balding. Tried even the onion juice , hair creams and infused oils, and lastly tried out even the ayurvedic brands like vedix. etc... All these trials made me think more ... In these trials I understood self made hair creams worked ... Reetha and shikkai worked ... But how much care do we need for the scalp and hair I went on to experiment... And the following helped... Will explain the why and the science behind it too... 1) Being on the nature cure way of life helped as we eat ...
